Brand terms are held apart from ingredient terms
A brand name appearing in a menu description never inflates a generic ingredient count. The two vocabularies are separate by construction.
Applications carry the commercial meaning
Sauce base, topping, marinade, side — the same ingredient is a different sale in each. Application is classified from the item description, not guessed from the category.
Absence is reported as inferred
Where an ingredient is missing from a segment that uses adjacent ingredients, that gap is surfaced for investigation. It is never presented as confirmed unmet demand.
